One cannot miss “Chinese cabbage” out from Japanese winter cooking, hot-pot. It is an oval shaped vegetable imported from China, has green leaf part and white core part rolled up in many layers giving it its heaviness. Recently Chinese cabbages are sold in size of half or one fourth, but the best way to eat it is as a whole. However, there are voices of housewives such as “heavy”, “cannot fit in a refrigerator”, “get rotten before finish eating”, etc. In a situation like this, what recently seen is small Chinese cabbage “baby Chinese cabbage”. Its size is half of the normal weighing about 300 to 500 g and can be held by one hand. Tokita Seed has developed it by improvement of the breed. It is soft and sweet and can be eaten raw as salad.
